Mix Together:
1 c. oil
3 eggs
2 c. sugar
2 ½ c. grated raw zucchini
2 tsp. vanilla
Add:
3 c. flour
1 tsp. soda
½ tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. chopped nuts, opt.

Pour batter into two greased loaf pans. Bake @ 325° for 1 ½ hours.
